The difference between Shounen and Seinen is more than that, as sometimes rape or extremely violent things actually can still be depicted or at least happen in Shounen. Knights would be an example of how far you can stretch the limitations of "Shounen" for what you're defining it as.From what I understand the difference can be that yes, more often those things are occur and are shown more graphically but the "Seinen" method of storytelling is generally much different.
The difference between the two I've noticed is mostly Shounen is generally very cookie cutter. Doesn't have to be, but 99% of the time it is. Seinen can be cookie cutter, but about half the time they do things that are atypical to how a Shounen story would be done. -
