Just finished scanning all the recommendations, and I have to add two TV shows that nobody mentioned, which are oldies but goodies if you ask me:

Record of Lodoss War (the original 13-episode series). Here the Japanese voice acting and subtitles are hugely superior to the dubbing, so only recommended under those conditions. Note that episode 1 is actually what happens between episodes 5 and 6.

Super Dimension Fortress Macross (the original 36-episode series). This is how soap operas for guys should be done. It also helps to understand, to appreciate, some things about Japanese culture:

• the strong desire to feel belonging to a group (in this case, the Macross ship crew and passengers) 
• the cultural behavior that people will express emotions, including romantic feelings, in metaphorical or oblique ways (not directly!)
• the natural consideration that is given to other people (allowing the characters in many cases to ask the right questions of each other and also show loyalty or diplomacy).

One can really enjoy the show and how it handles parts of the story, if you can get to about the 5th episode or maybe 7th episode or so and get hooked on this drama. The action scenes are not the selling point of this work.

I'm more of an anime dabbler than a fan. Replace Bleach with Tengen Toppa Gurren Lagann, and I think you've hit the nail on the head.

EDIT: I also don't see Neon Genesis Evangelion on that list. I know several people have problems with it, and say way you will, but it's had a HUGE influence on modern anime.

Almost everything on your list and a few odds and ends here and there.. Just stuff that's been recommend to me and I've found time to watch, I don't watch it religiously. Other than that, I watch stuff from "/a/'s recommended anime" lists.

A few that I really like that haven't been mentioned are:

Yu Yu Hakusho/HunterXHunter

Oreimo

Howl's Moving Castle
