Record of Lodoss War (the original 13-episode series). Here the Japanese voice acting and subtitles are hugely superior to the dubbing, so only recommended under those conditions. Note that episode 1 is actually what happens between episodes 5 and 6.
Super Dimension Fortress Macross (the original 36-episode series). This is how soap operas for guys should be done. It also helps to understand, to appreciate, some things about Japanese culture:

Permalink Reply by George Knight on April 4, 2012 at 12:14am I'm more of an anime dabbler than a fan. Replace Bleach with Tengen Toppa Gurren Lagann, and I think you've hit the nail on the head.
EDIT: I also don't see Neon Genesis Evangelion on that list. I know several people have problems with it, and say way you will, but it's had a HUGE influence on modern anime.

Just stuff that's been recommend to me and I've found time to watch, I don't watch it religiously. Other than that, I watch stuff from "/a/'s recommended anime" lists.
A few that I really like that haven't been mentioned are:
