Ninja Scroll, Robotech, Vampire Hunter D, Akira, Ghost in the Shell (the original movie, not the series), Gatchaman (aka Battle for the Planets aka G-Force) not in any particular order. I'm more into the older stuff, as you can see.

Grave of the Fireflies or Perfect Blue are always at the top of my list. Almost anything Miyazaki is usually following closely... And for shows, I guess Haibane Renmei. I haven't watched much anime recently.
Personally I wanna say Cowboy Bebop, because it was my first Anime I ever watched and Ive seen the series every episode about 5 times and watched the movie like 7. As much as I love Cowboy Bebop I might have to give it to Akira, i fucking love that movie. The first couple of times it was just hella confusing to me but once you understand it, it's a great movie, also the animation work that is done is AWESOME!!
On a side note...
At the conclusion of the final broadcast of Cartoon Network's long-standing Toonami block, the host character TOM (who had been voiced by Steven Blum, the American voice actor who played Spike Spiegel) uttered "Bang!" right before the broadcast signed off for the final time, which was also the final line spoken by Spike in the final episode of Cowboy Bebop.
It's an old movie, but, seriously, just try to find another animated film that can match the animation, color and detail in this day and age. With HUGE and detailed backgrounds, HUNDREDS of different colors used, and animation so could it was actually lip-synced to the Japanese voices, this is without a doubt the best anime movie of it's time and for all time.
